Harvest and Production
Harvesting is done by hand, selecting the best clusters at their optimal point of polyphenolic maturation. The grapes come from vineyards over 30 years old, situated on high, sterile land where they ripen with difficulty, concentrating their aroma, soft tannins and colour.
After the grapes have been harvested, the must is macerated for 40 days to extract the high potential of grapes that deserve the best processing to achieve well-balanced wines full of character.
The wine underwent malolactic fermentation in new American oak barrels. After racking, it was placed in new barrels made of French oak from the finest forests, where it aged for 16 months.
The barrels were lightly toasted to preserve the wine’s characteristics. We took great care of the wine while it was in the barrels, regularly conducting Batonage and racking it in
spring and autumn.
Finally, the wine was fined with egg prior to being bottled.
Tasting notes
Colour: Vivid cherry red core with a thin layer exhibiting purple shades. Smooth and brilliant.
Nose: After breathing in the wine glass, a highly intense aroma, raspberry, vanilla, cinnamon, coco, cacao, chocolate, freshly roasted coffee, ripe fruit compote. Truffle and pepper. With
time, aromas of raisins and an undertone of violets can be detected.
Taste: Powerful, fleshy, round, smooth soft tannins. These are wines with high aging potential. The tannin will continue to
polymerize, gaining in fineness on the palate and in aromatic complexity.
Recommendations
Open the bottle before tasting and allow the wine to breathe in the wine glass so it will open up and reach its full potential and complexity.
Serve around 18ºC.
